Thai Coconut Lime Tofu Noodles


  • 8 oz rice noodles
  • 1 cup firm tofu, cubed
  • 1 can (14 oz) coconut milk
  • 2 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon vegetable oil
  • 1 tablespoon red curry paste
  • Fresh cilantro and lime wedges for garnish


  1. Boil rice noodles according to package instructions; drain and set aside.
  2. In a large pan, heat vegetable oil over medium heat. Add garlic, ginger, and red curry paste; sauté until fragrant.
  3. Add cubed tofu to the pan and cook until golden brown.
  4. Pour in coconut milk, soy sauce, and lime juice. Stir well and let it simmer for 5 minutes.
  5. Toss in cooked rice noodles, ensuring they are well-coated with the flavorful sauce.
  6. Remove from heat and garnish with fresh cilantro and lime wedges.
