Thai Coconut Lemongrass Soup

Ingredients

  • 4 cups vegetable broth
  • 2 cans (14 oz each) coconut milk
  • 2 stalks lemongrass, smashed
  • 3-4 kaffir lime leaves
  • 1 inch ginger, sliced
  • 2 cloves garlic, minced
  • 1 red chili, sliced (optional)
  • 8 oz mushrooms, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. In a pot, bring vegetable broth and coconut milk to a gentle simmer over medium heat.
  2. Add lemongrass, kaffir lime leaves, ginger, garlic, and chili (if using). Let it simmer for 10-15 minutes to infuse flavors.
  3. Add mushrooms, soy sauce, and lime juice. Simmer for another 5-7 minutes.
  4. Season with salt according to taste.
  5. Remove lemongrass stalks and kaffir lime leaves before serving.
  6. Garnish with fresh cilantro and serve hot.
