Thai Coconut Lemongrass Soup
- 4 cups vegetable broth
- 2 cans (14 oz each) coconut milk
- 2 stalks lemongrass, smashed
- 3-4 kaffir lime leaves
- 1 inch ginger, sliced
- 2 cloves garlic, minced
- 1 red chili, sliced (optional)
- 8 oz mushrooms, sliced
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- Salt to taste
- Fresh cilantro for garnish
- In a pot, bring vegetable broth and coconut milk to a gentle simmer over medium heat.
- Add lemongrass, kaffir lime leaves, ginger, garlic, and chili (if using). Let it simmer for 10-15 minutes to infuse flavors.
- Add mushrooms, soy sauce, and lime juice. Simmer for another 5-7 minutes.
- Season with salt according to taste.
- Remove lemongrass stalks and kaffir lime leaves before serving.
- Garnish with fresh cilantro and serve hot.
