Teriyaki Tofu Bowl
Ingredients
- 1 block of firm tofu, cubed
- 1 cup broccoli florets
- 1 bell pepper, sliced
- 1 carrot, julienned
- 2 tablespoons sesame oil
- 3 tablespoons soy sauce
- 2 tablespoons maple syrup
- 1 tablespoon rice vinegar
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 tablespoon cornstarch dissolved in 2 tablespoons water
- Cooked rice for serving
- Sesame seeds and green onions for garnish
Instructions
- Press the tofu to remove excess water, then cut it into cubes.
- In a large pan, heat sesame oil over medium heat. Add tofu cubes and cook until golden brown on all sides.
- Add broccoli, bell pepper, and carrot to the pan. Sauté until vegetables are tender-crisp.
- In a bowl, mix soy sauce, maple syrup, rice vinegar, garlic, and ginger. Pour the sauce over the tofu and vegetables, stirring to coat evenly.
- Add the cornstarch mixture to the pan, stirring continuously until the sauce thickens.
