  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 cup broccoli florets
  • 1 red bell pepper, thinly sliced
  • 1 carrot, julienned
  • 1/4 cup edamame, steamed
  • 2 tablespoons sesame seeds
  • 1/4 cup teriyaki sauce
  • 2 green onions, chopped
  • Salt and pepper to taste


  1. Rinse the quinoa thoroughly under cold water.
  2. In a saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15-20 minutes until the quinoa is cooked and the liquid is absorbed.
  4. While the quinoa is cooking, steam the broccoli and edamame until tender-crisp.
  5. In a skillet, sauté the bell pepper and carrot until slightly tender.
  6. Add cooked quinoa, steamed vegetables, teriyaki sauce, and sesame seeds to the skillet. Stir well to combine.
  7. Season with salt and pepper to taste.
  8. Serve the teriyaki sesame quinoa in bowls, garnished with chopped green onions.
