Teriyaki Ginger Tofu Bowl

 

Ingredients

  • 1 package firm tofu, pressed and cubed
  • 1/2 cup soy sauce
  • 3 tablespoons mirin
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 tablespoons brown sugar
  • 1 tablespoon fresh ginger, minced
  • 2 cloves garlic, minced
  • 2 cups cooked brown rice
  • 1 cup broccoli florets, steamed
  • 1 carrot, julienned
  • 2 green onions, sliced
  • Sesame seeds for garnish

 

Instructions

  1. In a bowl, mix soy sauce, mirin, rice vinegar, sesame oil, brown sugar, ginger, and garlic to create the teriyaki sauce.
  2. Marinate tofu cubes in the teriyaki sauce for at least 30 minutes.
  3. Preheat a pan over medium heat. Add marinated tofu and cook until golden brown.
  4. Assemble the bowl by placing brown rice in the base, topped with teriyaki tofu, steamed broccoli, julienned carrots, and sliced green onions.
  5. Garnish with sesame seeds and extra teriyaki sauce if desired.
