Tangy Tamarind Tofu Stir-fry

 

Ingredients

  • 1 block of firm tofu, pressed and cubed
  • 2 tablespoons tamarind paste
  • 2 tablespoons soy sauce
  • 1 tablespoon maple syrup
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 cup snow peas
  • 2 green onions, chopped
  • Cooked rice, for serving
  • Toasted sesame seeds for garnish

 

Instructions

  1. In a bowl, mix tamarind paste, soy sauce, maple syrup, and sesame oil. Set aside.
  2. Heat a skillet over medium-high heat. Add a bit of oil and sauté garlic until fragrant.
  3. Add tofu cubes to the skillet and cook until golden brown on all sides.
  4. Add bell pepper and snow peas, cooking until slightly tender.
  5. Pour the tamarind sauce over the tofu and vegetables, stirring gently to coat evenly. Cook for a few minutes until the sauce thickens.
  6. Remove from heat, garnish with green onions and sesame seeds, and serve over rice.
