Sweet Potato and Kale Caesar Salad


  • 2 medium sweet potatoes, peeled and cubed
  • 1 bunch kale, stems removed and chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup Caesar dressing
  • Salt and pepper to taste
  • Croutons for garnish


  1. Preheat the oven to 400°F (200°C). Toss the cubed sweet potatoes with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 20-25 minutes or until tender and slightly caramelized.
  2. In a large bowl, massage the chopped kale with a bit of olive oil for a few minutes to soften it.
  3. Add the roasted sweet potatoes, cherry tomatoes, and grated Parmesan cheese to the bowl with kale.
  4. Pour Caesar dressing over the salad and toss until everything is well coated.
  5. Season with salt and pepper to taste.
  6. Garnish with croutons before serving.
