Sweet Potato and Kale Caesar Salad
- 2 medium sweet potatoes, peeled and cubed
- 1 bunch kale, stems removed and chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup grated Parmesan cheese
- 1/4 cup Caesar dressing
- Salt and pepper to taste
- Croutons for garnish
- Preheat the oven to 400°F (200°C). Toss the cubed sweet potatoes with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 20-25 minutes or until tender and slightly caramelized.
