  • 2 cups Arborio rice
  • 1 lb mixed seafood (shrimp, mussels, squid)
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup frozen peas
  • 1/4 teaspoon saffron threads
  • 4 cups seafood broth
  • 1/4 cup white wine
  • 2 tablespoons olive oil
  • Salt and pepper to taste


  1. Heat olive oil in a paella pan over medium heat.
  2. Add chopped onions and garlic, sauté until translucent.
  3. Add diced red bell pepper and sauté for 2 minutes.
  4. Stir in Arborio rice and saffron threads, ensuring the rice is well-coated.
  5. Pour in white wine and let it simmer until mostly absorbed.
  6. Gradually add seafood broth, stirring frequently.
  7. Arrange seafood, cherry tomatoes, and peas evenly in the pan.
  8. Cook until rice is tender, and seafood is cooked through.
  9. Season with salt and pepper to taste.
  10. Remove from heat, cover, and let it rest for 5 minutes.
