  • 1 cup quinoa
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups vegetable broth
  • 1/4 cup pine nuts
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste


  1. Rinse the quinoa under cold water.
  2. In a medium saucepan, combine the quinoa and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes or until the quinoa is cooked and the liquid is absorbed.
  3. In a skillet over medium heat, toast the pine nuts until golden brown. Set aside.
  4. In the same skillet, sauté the garlic until fragrant. Add the sun-dried tomatoes and cook for an additional 2-3 minutes.
  5. Fluff the cooked quinoa with a fork and transfer it to a large bowl. Add the sautéed sun-dried tomatoes, garlic, pine nuts, and fresh basil. Mix well.
  6. Season with salt and pepper to taste.
