Sun-Dried Tomato Quinoa
Ingredients
- 1 cup quinoa
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups vegetable broth
- 1/4 cup pine nuts
- 2 cloves garlic, minced
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water.
- In a medium saucepan, combine the quinoa and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes or until the quinoa is cooked and the liquid is absorbed.
- In a skillet over medium heat, toast the pine nuts until golden brown. Set aside.
