Spicy Southwest Quinoa Bowl
- 1 cup quinoa, rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels
- 1 red bell pepper, diced
- 1 avocado, diced
- 1/4 cup chopped cilantro
- 1 lime, juiced
- 1 tsp cumin powder
- 1 tsp chili powder
- Salt and pepper to taste
- In a saucepan, cook quinoa according to package instructions. Fluff with a fork and set aside.
