Spicy Southwest Quinoa Bowl



  • 1 cup quinoa, rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1/4 cup chopped cilantro
  • 1 lime, juiced
  • 1 tsp cumin powder
  • 1 tsp chili powder
  • Salt and pepper to taste



  1. In a saucepan, cook quinoa according to package instructions. Fluff with a fork and set aside.
  2. In a large mixing bowl, combine black beans, corn, diced bell pepper, avocado, and cilantro.
  3. Add cooked quinoa to the mixture and gently toss.
  4. In a small bowl, whisk together lime juice, cumin, chili powder, salt, and pepper.
  5. Pour the dressing over the quinoa mixture and toss until well combined.
  6. Divide into bowls and serve. Garnish with additional cilantro or lime wedges if desired.
