Spicy Peanut Soba Noodles

Ingredients

  • 8 oz soba noodles
  • 1/2 cup peanut butter
  • 3 tbsp soy sauce
  • 2 tbsp sesame oil
  • 2 tbsp rice vinegar
  • 1 tbsp sriracha sauce
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 cup shredded carrots
  • 1/2 cup chopped scallions
  • 1/4 cup chopped peanuts
  • Fresh cilantro for garnish

Instructions

  1. Cook soba noodles according to package instructions. Drain and rinse under cold water.
  2. In a bowl, whisk together peanut butter, soy sauce, sesame oil, rice vinegar, sriracha, garlic, and ginger to make the sauce.
  3. Toss the cooked noodles with the sauce until well coated.
  4. Stir in shredded carrots and scallions.
  5. Chill in the refrigerator for at least 30 minutes to let the flavors meld.
  6. Before serving, sprinkle with chopped peanuts and garnish with fresh cilantro.
