Spicy Mango Quinoa Bowl
- 1 cup quinoa
- 2 cups water
- 1 ripe mango, diced
- 1/2 red onion, finely chopped
- 1 red bell pepper, diced
- 1/4 cup fresh cilantro, chopped
- 1 jalapeño, seeded and minced
- Juice of 2 limes
- 2 tablespoons olive oil
- Salt and pepper to taste
- Rinse the quinoa under cold water.
- In a saucepan, combine quinoa and water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until quinoa is cooked and water is absorbed.
- Fluff the quinoa with a fork and let it cool.
- In a large bowl, combine quinoa, diced mango, red onion, red bell pepper, cilantro, jalapeño, lime juice, and olive oil. Toss until well combined.
