Spicy Mango Quinoa Bowl


  • 1 cup quinoa
  • 2 cups water
  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1 red bell pepper, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and minced
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • Salt and pepper to taste


  1. Rinse the quinoa under cold water.
  2. In a saucepan, combine quinoa and water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until quinoa is cooked and water is absorbed.
  3. Fluff the quinoa with a fork and let it cool.
  4. In a large bowl, combine quinoa, diced mango, red onion, red bell pepper, cilantro, jalapeño, lime juice, and olive oil. Toss until well combined.
  5. Season with salt and pepper to taste.
  6. Chill in the refrigerator for at least 30 minutes before serving.
