Spicy Mango Cilantro Quinoa Bowl


  • 1 cup quinoa, rinsed
  • 2 cups water or vegetable broth
  • 1 ripe mango, diced
  • 1/2 cup chopped fresh cilantro
  • 1 red bell pepper, diced
  • 1 jalapeño, seeded and minced
  • Juice of 1 lime
  • 2 tablespoons olive oil
  • Salt and pepper to taste


  1. In a saucepan, combine quinoa and water or vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until quinoa is cooked and liquid is absorbed.
  2. Fluff the quinoa with a fork and transfer it to a large mixing bowl.
  3. Add diced mango, chopped cilantro, diced red bell pepper, minced jalapeño, lime juice, and olive oil to the bowl. Mix gently to combine.
  4. Season with salt and pepper to taste.
