  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons harissa paste
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh cilantro for garnish


  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and sauté until translucent.
  3. Stir in minced garlic, harissa paste, cumin, and smoked paprika. Cook for 2 minutes.
  4. Add chickpeas, diced tomatoes, and vegetable broth. Season with salt and pepper.
  5. Bring the stew to a boil, then reduce heat and simmer for 20-25 minutes.
  6. Serve hot, garnished with fresh cilantro.
