Spicy Black Bean Quinoa Salad


  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1 cup corn kernels
  • 1/4 cup red onion, finely chopped
  • 1 jalapeño pepper, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste


  1. In a saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes or until quinoa is cooked and liquid is absorbed.
  2. In a large mixing bowl, combine cooked quinoa, black beans, bell pepper, corn, red onion, jalapeño, and cilantro.
  3. In a small bowl, whisk together lime juice, olive oil, cumin, chili powder, salt, and pepper. Pour over the quinoa mixture and toss until everything is well coated.
  4. Adjust seasoning if needed and refrigerate for at least 30 minutes before serving.
  5. Serve chilled and garnish with additional cilantro if desired. Enjoy!
