Spicy Black Bean Quinoa Salad
Ingredients
- 1 cup quinoa, rinsed
- 2 cups vegetable broth
- 1 can (15 oz) black beans, drained and rinsed
- 1 red bell pepper, diced
- 1 cup corn kernels
- 1/4 cup red onion, finely chopped
- 1 jalapeño pepper, seeded and minced
- 1/4 cup fresh cilantro, chopped
- Juice of 2 limes
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
Instructions
- In a saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes or until quinoa is cooked and liquid is absorbed.
- In a large mixing bowl, combine cooked quinoa, black beans, bell pepper, corn, red onion, jalapeño, and cilantro.
- In a small bowl, whisk together lime juice, olive oil, cumin, chili powder, salt, and pepper. Pour over the quinoa mixture and toss until everything is well coated.
- Adjust seasoning if needed and refrigerate for at least 30 minutes before serving.
- Serve chilled and garnish with additional cilantro if desired. Enjoy!
