  • 3 large carrots, peeled and sliced
  • 2 parsnips, peeled and cut into chunks
  • 3 beets, peeled and diced
  • 1 sweet potato, peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste


  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the carrots, parsnips, beets, and sweet potato with olive oil, cumin, smoked paprika, salt, and pepper until evenly coated.
  3. Spread the vegetables in a single layer on a baking sheet.
  4. Roast in the preheated oven for 30-35 minutes or until the vegetables are tender and golden brown, stirring halfway through.
  5. Remove from the oven and let them cool slightly before serving.
