  • 4 cups diced pumpkin
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish


  1. Heat olive oil in a large pot over medium heat. Add onions and garlic, sauté until softened.
  2. Add diced pumpkin and spices. Cook for 5 minutes, stirring occasionally.
  3. Pour in vegetable broth and bring to a boil. Reduce heat and simmer until pumpkin is tender.
  4. Use an immersion blender to puree the soup until smooth.
