  • 2 cups Arborio rice
  • 1 cup canned pumpkin puree
  • 4 cups vegetable broth
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup dry white wine
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh sage, chopped
  • 1 teaspoon ground nutmeg
  • Salt and pepper to taste
  • 2 tablespoons olive oil


  1. Heat olive oil in a large pan over medium heat.
  2. Add chopped onion and garlic, sauté until translucent.
  3. Stir in Arborio rice and cook for 2 minutes.
  4. Pour in white wine, stirring constantly until absorbed.
  5. Begin adding vegetable broth, one cup at a time, stirring until absorbed.
  6. After 15 minutes, add pumpkin puree, sage, nutmeg, salt, and pepper.
  7. Continue adding broth until rice is creamy and cooked al dente.
  8. Stir in Parmesan cheese and adjust seasoning to taste.
  9. Serve hot, garnished with additional sage leaves if desired.
