Spiced Coconut Lentil Soup


  • 1 cup dried lentils
  • 1 can coconut milk
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 cups vegetable broth
  • Juice of 1 lemon
  • Fresh cilantro for garnish


  1. Start by rinsing the lentils under cold water. Set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the minced garlic and sauté for another minute until fragrant.
  4. Stir in the ground cumin, ground coriander, turmeric, and cayenne pepper. Cook for an additional 2 minutes.
  5. Add the lentils, coconut milk, vegetable broth, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20-25 minutes or until the lentils are tender.
  6. Stir in the lemon juice and adjust seasoning to taste.
  7. Serve hot, garnished with fresh cilantro.
