Spiced Coconut Lentil Soup
- 1 cup dried lentils
- 1 can coconut milk
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- 2 tablespoons olive oil
- 4 cups vegetable broth
- Juice of 1 lemon
- Fresh cilantro for garnish
- Start by rinsing the lentils under cold water. Set aside.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic and sauté for another minute until fragrant.
- Stir in the ground cumin, ground coriander, turmeric, and cayenne pepper. Cook for an additional 2 minutes.
- Add the lentils, coconut milk, vegetable broth, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20-25 minutes or until the lentils are tender.
- Stir in the lemon juice and adjust seasoning to taste.
