  • 2 cups Bomba rice
  • 1 lb jumbo shrimp, peeled and deveined
  • 1 lb mussels, cleaned and debearded
  • 1 chorizo sausage, sliced
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup frozen peas
  • 1 teaspoon saffron threads
  • 4 cups chicken broth
  • 1/2 cup white wine
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish


  1. Heat olive oil in a paella pan over medium heat.
  2. Add sliced chorizo and cook until browned.
  3. Add chopped onion, garlic, and red bell pepper. Sauté until vegetables are softened.
  4. Stir in Bomba rice and saffron threads, ensuring the rice is well-coated with oil.
  5. Pour in white wine and cook until mostly evaporated.
  6. Add chicken broth and bring to a simmer. Season with salt and pepper.
  7. Arrange shrimp, mussels, and peas evenly over the rice.
  8. Cover and simmer for 20-25 minutes or until rice is tender and seafood is cooked.
  9. Garnish with fresh parsley before serving.
