Ingredients

  • 1 pre-made pie crust
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup diced bell peppers (red and green)
  • 1 cup shredded cheddar cheese
  • 4 large eggs
  • 1 cup milk
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place the pre-made pie crust in a pie dish and set aside.
  3. In a large bowl, mix together black beans, corn, bell peppers, and cheddar cheese. Spread this mixture evenly over the pie crust.
  4. In a separate bowl, whisk together eggs, milk, cumin, chili powder, salt, and pepper. Pour this egg mixture over the bean and vegetable mixture.
  5. Bake in the preheated oven for 35-40 minutes or until the center is set and the top is golden brown.
  6. Remove from the oven and let it cool for a few minutes before slicing.
