Southwestern Black Bean Quiche
Ingredients
- 1 pre-made pie crust
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup diced bell peppers (red and green)
- 1 cup shredded cheddar cheese
- 4 large eggs
- 1 cup milk
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Place the pre-made pie crust in a pie dish and set aside.
- In a large bowl, mix together black beans, corn, bell peppers, and cheddar cheese. Spread this mixture evenly over the pie crust.
- In a separate bowl, whisk together eggs, milk, cumin, chili powder, salt, and pepper. Pour this egg mixture over the bean and vegetable mixture.
