A flavorful and nutritious Southwest-inspired quinoa black bean bowl.
Southwest Quinoa Black Bean Bowl
- 1 cup quinoa, rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels
- 1 red bell pepper, diced
- 1 avocado, sliced
- 1/4 cup chopped fresh cilantro
- 1 lime, juiced
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- Salt and pepper to taste
- In a saucepan, combine quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until quinoa is cooked and water is absorbed.
- In a large mixing bowl, combine cooked quinoa, black beans, corn, diced red bell pepper, sliced avocado, and chopped cilantro.
- In a small bowl, whisk together lime juice, olive oil, ground cumin, salt, and pepper.
- Pour the dressing over the quinoa mixture and toss gently to combine.
- Serve immediately and enjoy!
