Southwest Quinoa Black Bean Bowl


  • 1 cup quinoa, rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 red bell pepper, diced
  • 1 avocado, sliced
  • 1/4 cup chopped fresh cilantro
  • 1 lime, juiced
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • Salt and pepper to taste


  1. In a saucepan, combine quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until quinoa is cooked and water is absorbed.
  2. In a large mixing bowl, combine cooked quinoa, black beans, corn, diced red bell pepper, sliced avocado, and chopped cilantro.
  3. In a small bowl, whisk together lime juice, olive oil, ground cumin, salt, and pepper.
  4. Pour the dressing over the quinoa mixture and toss gently to combine.
  5. Serve immediately and enjoy!
