  • 2 cans black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • Tortilla chips for serving


  1. In a large bowl, combine black beans, corn, red and green bell peppers, cherry tomatoes, red onion, avocado, and cilantro.
  2. In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
  3. Pour the dressing over the bean mixture and toss gently to combine.
  4. Chill the salad in the refrigerator for at least 30 minutes to let the flavors meld.
  5. Serve the Southwest Black Bean Fiesta chilled, with tortilla chips on the side.
