  • 2 cans of chickpeas, drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup feta cheese, crumbled
  • Fresh parsley for garnish


  1. In a large bowl, combine the chickpeas, olive oil, smoked paprika, garlic powder, salt, and pepper. Toss until the chickpeas are well coated.
  2. Spread the chickpeas on a baking sheet and roast in a preheated oven at 400°F (200°C) for 20-25 minutes or until they are golden and crispy.
  3. Remove the chickpeas from the oven and let them cool slightly.
  4. In a serving bowl, mix the roasted chickpeas with cherry tomatoes, cucumber, red onion, and feta cheese.
