  • Assorted bell peppers, thinly sliced
  • Red onion, thinly sliced
  • Zucchini, sliced
  • Yellow squash, sliced
  • Cherry tomatoes, halved

  • Fajita seasoning
  • Salt and pepper, to taste
  • Tortillas, for serving
  • Optional toppings: Guacamole, salsa, sour cream

  2. Add olive oil to the skillet.
