Ingredients

  • 2 large sweet potatoes, spiralized
  • 3 tablespoons sesame oil
  • 2 tablespoons grated ginger
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey or maple syrup
  • 1/4 cup chopped green onions
  • Toasted sesame seeds for garnish

Instructions

  1. Heat sesame oil in a pan over medium heat. Add grated ginger and minced garlic, sauté for 1-2 minutes until fragrant.
  2. Add spiralized sweet potatoes to the pan and stir-fry for 5-7 minutes until tender yet slightly crisp.
  3. In a small bowl, mix soy sauce, rice vinegar, and honey/maple syrup. Pour this sauce over the sweet potato noodles and toss to coat evenly.
  4. Continue cooking for an additional 2-3 minutes, allowing the flavors to meld.
  5. Remove from heat, garnish with chopped green onions and toasted sesame seeds.
  6. Serve hot and enjoy!
