  • 2 cups roasted sunflower seeds
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup chopped carrots
  • 1 cup diced potatoes
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/2 cup heavy cream
  • Fresh parsley for garnish


  1. Heat olive oil in a large pot over medium heat. Add onions and garlic; sauté until fragrant.
  2. Add carrots and potatoes; cook for 5 minutes.
  3. Stir in sunflower seeds, thyme, salt, and pepper. Pour in vegetable broth and bring to a boil.
  4. Reduce heat, cover, and simmer for 20 minutes or until vegetables are tender.
  5. Use an immersion blender to puree the soup until smooth.
  6. Stir in heavy cream and adjust seasoning to taste.
  7. Serve hot, garnished with fresh parsley.
