  • 2 cups dried lentils
  • 4 cups vegetable broth
  • 1 onion, diced
  • 3 carrots, chopped
  • 3 celery stalks, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste


  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, sauté the onions, carrots, and celery in olive oil until softened.
  3. Add the minced garlic and sauté for an additional minute.
  4. Stir in the lentils, vegetable broth, thyme, rosemary, and bay leaf.
  5. Bring the stew to a boil, then reduce the heat and simmer for 25-30 minutes or until the lentils are tender.
  6. Season with salt and pepper to taste.
  7. Remove the bay leaf before serving.
