Saffron Infused Rice Pilaf
Ingredients
- 2 cups basmati rice
- 1/2 teaspoon saffron threads
- 4 cups vegetable broth
- 1/4 cup butter
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup slivered almonds
- Salt and pepper to taste
Instructions
- Rinse the basmati rice under cold water until the water runs clear. Soak the saffron threads in 2 tablespoons of warm water.
- In a large saucepan, melt the butter over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic and sauté for an additional minute.
- Stir in the basmati rice, making sure it’s well-coated with the butter, onion, and garlic mixture.
- Pour in the vegetable broth and saffron water. Season with salt and pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is tender and has absorbed the liquid.
- While the rice is cooking, toast the slivered almonds in a dry pan until golden brown.
- Once the rice is done, fluff it with a fork and gently fold in the toasted almonds.
- Serve the Saffron Infused Rice Pilaf hot, garnished with additional saffron threads if desired.
