Saffron Infused Rice Pilaf


  • 2 cups basmati rice
  • 1/2 teaspoon saffron threads
  • 4 cups vegetable broth
  • 1/4 cup butter
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup slivered almonds
  • Salt and pepper to taste


  1. Rinse the basmati rice under cold water until the water runs clear. Soak the saffron threads in 2 tablespoons of warm water.
  2. In a large saucepan, melt the butter over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the minced garlic and sauté for an additional minute.
  4. Stir in the basmati rice, making sure it’s well-coated with the butter, onion, and garlic mixture.
  5. Pour in the vegetable broth and saffron water. Season with salt and pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is tender and has absorbed the liquid.
  6. While the rice is cooking, toast the slivered almonds in a dry pan until golden brown.
  7. Once the rice is done, fluff it with a fork and gently fold in the toasted almonds.
  8. Serve the Saffron Infused Rice Pilaf hot, garnished with additional saffron threads if desired.
