Saffron-infused Chickpea Stew
- 2 cups cooked chickpeas
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 can diced tomatoes
- 1 teaspoon ground cumin
- A pinch of saffron threads
- 4 cups vegetable broth
- Salt and pepper to taste
- Fresh cilantro for garnish
- Heat olive oil in a large pot over medium heat. Add the chopped onion and cook until softened.
