Saffron-infused Chickpea Stew


  • 2 cups cooked chickpeas
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 can diced tomatoes
  • 1 teaspoon ground cumin
  • A pinch of saffron threads
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish


  1. Heat olive oil in a large pot over medium heat. Add the chopped onion and cook until softened.
  2. Add minced garlic, diced bell pepper, and sauté for a few minutes.
  3. Add the diced tomatoes, ground cumin, saffron threads, cooked chickpeas, and vegetable broth.
  4. Season with salt and pepper. Bring the stew to a boil, then reduce heat and simmer for 20-25 minutes.
  5. Adjust seasoning if needed. Serve hot, garnished with fresh cilantro.
