Roasted Veggie Polenta Towers


  • 2 cups polenta
  • 1 eggplant, diced
  • 1 zucchini, sliced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 red onion, thinly sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup feta cheese, crumbled
  • Fresh basil leaves for garnish


  1. Preheat the oven to 400°F (200°C).
  2. Prepare the polenta according to package instructions.
  3. In a large bowl, toss the diced eggplant, sliced zucchini, chopped red and yellow bell peppers, and thinly sliced red onion with olive oil, salt, and pepper.
  4. Spread the seasoned vegetables on a baking sheet and roast in the preheated oven for 20-25 minutes or until tender.
  5. While the vegetables are roasting, mold the cooked polenta into tower shapes using a mold or by hand.
  6. Once the vegetables are roasted, assemble the towers by layering the polenta with the roasted veggies and crumbled feta cheese.
  7. Garnish with fresh basil leaves and serve immediately.
