Roasted Veggie Polenta Towers
Ingredients
- 2 cups polenta
- 1 eggplant, diced
- 1 zucchini, sliced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 red onion, thinly sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 cup feta cheese, crumbled
- Fresh basil leaves for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Prepare the polenta according to package instructions.
- In a large bowl, toss the diced eggplant, sliced zucchini, chopped red and yellow bell peppers, and thinly sliced red onion with olive oil, salt, and pepper.
- Spread the seasoned vegetables on a baking sheet and roast in the preheated oven for 20-25 minutes or until tender.
- While the vegetables are roasting, mold the cooked polenta into tower shapes using a mold or by hand.
- Once the vegetables are roasted, assemble the towers by layering the polenta with the roasted veggies and crumbled feta cheese.
- Garnish with fresh basil leaves and serve immediately.
