  • 1 cup quinoa, rinsed and cooked
  • 2 cups mixed vegetables (bell peppers, zucchini, cherry tomatoes)
  • 1/4 cup olive oil
  • 1 teaspoon dried herbs (rosemary, thyme, oregano)
  • Salt and pepper to taste
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons balsamic vinegar
  • Fresh parsley for garnish


  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the mixed vegetables with olive oil, dried herbs, salt, and pepper.
