  • 1 cup quinoa
  • 2 cups mixed vegetables (bell peppers, zucchini, cherry tomatoes, etc.), diced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped


  1. Preheat the oven to 400°F (200°C).
  2. Rinse the quinoa under cold water and cook it according to package instructions.
  3. In a large bowl, toss the diced vegetables with olive oil, dried oregano, salt, and pepper.
  4. Spread the seasoned vegetables on a baking sheet and roast in the preheated oven for 20-25 minutes or until they are tender and slightly caramelized.
  5. Once the quinoa and vegetables are cooked, combine them in a large bowl.
