Roasted Tomato Basil Soup


  • 8 large tomatoes, halved
  • 1/4 cup olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 cup fresh basil leaves
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • 1/2 cup heavy cream (optional)


  1. Preheat the oven to 400°F (200°C).
  2. Place the halved tomatoes on a baking sheet, drizzle with olive oil, and roast for 30 minutes.
  3. In a large pot, sauté the chopped onion and minced garlic until golden brown.
  4. Add the roasted tomatoes, fresh basil, and vegetable broth. Simmer for 20 minutes.
  5. Use an immersion blender to puree the soup until smooth.
  6. Season with salt and pepper to taste. If desired, stir in the heavy cream for extra creaminess.
  7. Simmer for an additional 10 minutes, then serve hot.
