Roasted Tomato Basil Soup
- 8 large tomatoes, halved
- 1/4 cup olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 cup fresh basil leaves
- 4 cups vegetable broth
- Salt and pepper to taste
- 1/2 cup heavy cream (optional)
- Preheat the oven to 400°F (200°C).
- Place the halved tomatoes on a baking sheet, drizzle with olive oil, and roast for 30 minutes.
- In a large pot, sauté the chopped onion and minced garlic until golden brown.
- Add the roasted tomatoes, fresh basil, and vegetable broth. Simmer for 20 minutes.
