  • 1 cup red lentils
  • 1 can coconut milk
  • 2 tablespoons red curry paste
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 sweet potato, diced
  • 1 carrot, sliced
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish


  1. Heat a large pot over medium heat.
  2. Add the diced onion, minced garlic, and grated ginger. Sauté until the onion is translucent.
  3. Stir in the red curry paste and cook for an additional 2 minutes.
  4. Add the sweet potato, carrot, and red lentils to the pot. Mix well.
  5. Pour in the coconut milk and vegetable broth. Season with salt and pepper to taste.
  6. Bring the stew to a boil, then reduce heat and let it simmer for 20-25 minutes or until lentils are tender.
  7. Once cooked, ladle the stew into bowls and garnish with fresh cilantro.
