  • 4 medium zucchinis, spiralized
  • 1 eggplant, diced
  • 2 bell peppers, thinly sliced
  • 3 tomatoes, chopped
  • 1 onion, finely diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste


  1. Heat olive oil in a large pan over medium heat.
  2. Add onions and garlic, sauté until fragrant.
  3. Add eggplant and cook until softened.
  4. Stir in bell peppers, tomatoes, thyme, oregano, salt, and pepper.
  5. Simmer for 15-20 minutes until vegetables are tender.
  6. In a separate pan, sauté spiralized zucchini until just tender.
  7. Serve the ratatouille mixture over the zoodles.
  8. Garnish with fresh herbs if desired.
