  • 1 cup quinoa, rinsed and drained
  • 1 eggplant, diced
  • 1 zucchini, sliced
  • 1 yellow bell pepper, chopped
  • 1 red onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1/4 cup tomato paste
  • 2 teaspoons dried oregano
  • 2 teaspoons dried basil
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • Fresh basil leaves for garnish


  1. Preheat your oven to 375°F (190°C).
  2. Rinse the quinoa under cold water and cook according to package instructions.
  3. In a large skillet, sauté the onion and garlic until fragrant and translucent.
  4. Add the eggplant, zucchini, and bell pepper. Cook until the vegetables are tender.
  5. Stir in the diced tomatoes, tomato paste, oregano, basil, salt, and pepper. Simmer for 10 minutes.
  6. Combine the cooked quinoa with the vegetable mixture.
  7. Transfer the mixture to a casserole dish and top with shredded mozzarella.
  8. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  9. Garnish with fresh basil leaves before serving.
