  • 1 large eggplant, diced
  • 2 zucchinis, sliced
  • 2 bell peppers, chopped
  • 1 red onion, thinly sliced
  • 3 tomatoes, diced
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste


  1. Preheat the oven to 375°F (190°C).
  2. In a large baking dish, combine the diced eggplant, sliced zucchinis, chopped bell peppers, thinly sliced red onion, diced tomatoes, and minced garlic.
  3. Drizzle olive oil over the vegetables and sprinkle with dried thyme, dried oregano, salt, and pepper. Toss to coat evenly.
  4. Bake in the preheated oven for 40-45 minutes or until the vegetables are tender, stirring halfway through.
  5. Remove from the oven and let it rest for 5 minutes before serving.
