Ingredients

  • 1 cup cooked quinoa
  • 1 cup mashed sweet potatoes
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg, beaten
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Mix cooked quinoa, mashed sweet potatoes, breadcrumbs, Parmesan cheese, beaten egg, garlic powder, salt, and pepper in a large bowl.
  2. Form the mixture into small patties.
  3. Heat olive oil in a pan over medium heat.
  4. Cook the quinoa and sweet potato cakes for 3-4 minutes on each side or until golden brown.
  5. Remove from the pan and let them cool slightly before serving.
