Pineapple Teriyaki Tofu Stir-Fry
Ingredients
- 1 block of firm tofu, cubed
- 1 cup pineapple chunks
- 1 bell pepper, sliced
- 1 carrot, julienned
- 1/2 cup teriyaki sauce
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 2 tbsp vegetable oil
- Salt and pepper to taste
- Cooked rice for serving
Instructions
- Press the tofu to remove excess water, then cut it into cubes.
- In a large wok or skillet, heat vegetable oil over medium-high heat.
- Add tofu cubes and cook until golden brown on all sides. Remove from the wok and set aside.
- In the same wok, add sesame oil, garlic, and ginger. Sauté until fragrant.
- Add bell pepper and carrot, stir-frying until slightly tender.
- Return the tofu to the wok and add pineapple chunks.
- Pour in teriyaki sauce and soy sauce. Stir well to coat everything evenly.
- Season with salt and pepper to taste. Cook for an additional 2-3 minutes.
