Pineapple Teriyaki Tofu Stir-Fry

Ingredients

  • 1 block of firm tofu, cubed
  • 1 cup pineapple chunks
  • 1 bell pepper, sliced
  • 1 carrot, julienned
  • 1/2 cup teriyaki sauce
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 2 tbsp vegetable oil
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  1. Press the tofu to remove excess water, then cut it into cubes.
  2. In a large wok or skillet, heat vegetable oil over medium-high heat.
  3. Add tofu cubes and cook until golden brown on all sides. Remove from the wok and set aside.
  4. In the same wok, add sesame oil, garlic, and ginger. Sauté until fragrant.
  5. Add bell pepper and carrot, stir-frying until slightly tender.
  6. Return the tofu to the wok and add pineapple chunks.
  7. Pour in teriyaki sauce and soy sauce. Stir well to coat everything evenly.
  8. Season with salt and pepper to taste. Cook for an additional 2-3 minutes.
  9. Serve the Pineapple Teriyaki Tofu Stir-Fry over cooked rice.
