  • 2 large zucchinis, spiralized into ribbons
  • 1 cup fresh basil leaves
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup pine nuts
  • 2 cloves garlic
  • 1/2 cup extra-virgin olive oil
  • Salt and pepper to taste
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup freshly grated Parmesan for topping


  1. Spiralize the zucchinis into ribbons and set aside.
  2. In a food processor, combine basil, grated Parmesan, pine nuts, and garlic. Pulse until finely chopped.
  3. With the processor running, slowly add the olive oil until the pesto reaches a smooth consistency. Season with salt and pepper.
  4. In a large pan, sauté the zucchini ribbons until just tender.
  5. Toss the zucchini ribbons with the pesto sauce and cherry tomatoes until well coated.
