Pesto Zoodle and Tomato Salad
- 2 medium zucchinis, spiralized into zoodles
- 1 cup cherry tomatoes, halved
- 1/2 cup fresh basil leaves
- 1/4 cup pine nuts
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic
- 1/2 cup extra-virgin olive oil
- Salt and pepper to taste
- In a blender or food processor, combine the basil, pine nuts, Parmesan, and garlic. Pulse until finely chopped.
- With the blender or food processor running, slowly stream in the olive oil until the pesto reaches your desired consistency. Season with salt and pepper to taste.
- In a large bowl, toss the zoodles and cherry tomatoes with the freshly made pesto until well coated.
- Serve the Pesto Zoodle and Tomato Salad chilled, garnished with additional Parmesan and fresh basil if desired.
