Pesto Zoodle and Tomato Salad


  • 2 medium zucchinis, spiralized into zoodles
  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh basil leaves
  • 1/4 cup pine nuts
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic
  • 1/2 cup extra-virgin olive oil
  • Salt and pepper to taste


  1. In a blender or food processor, combine the basil, pine nuts, Parmesan, and garlic. Pulse until finely chopped.
  2. With the blender or food processor running, slowly stream in the olive oil until the pesto reaches your desired consistency. Season with salt and pepper to taste.
  3. In a large bowl, toss the zoodles and cherry tomatoes with the freshly made pesto until well coated.
  4. Serve the Pesto Zoodle and Tomato Salad chilled, garnished with additional Parmesan and fresh basil if desired.
