  • 4 boneless, skinless chicken breasts
  • 1 cup pesto sauce
  • 1 cup mozzarella cheese, shredded
  • Salt and pepper to taste
  • 2 tablespoons olive oil


  1. Preheat your oven to 375°F (190°C).
  2. Make a pocket in each chicken breast by cutting a slit horizontally, being careful not to cut all the way through.
  3. Season the inside of each pocket with salt and pepper.
  4. Stuff each pocket with a generous spoonful of pesto sauce and a sprinkle of mozzarella cheese.
  5. Secure the pockets with toothpicks to keep the stuffing inside.
  6. Heat olive oil in an oven-safe skillet over medium-high heat.
  7. Sear the chicken breasts on each side until golden brown.
  8. Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken is cooked through.
