  • 4 large zucchinis
  • 1 pound shrimp, peeled and deveined
  • 1 cup cherry tomatoes, halved
  • 1/2 cup pesto sauce
  • 1 cup mozzarella cheese, shredded
  • Salt and pepper to taste
  • Fresh basil for garnish


  1. Preheat the oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the seeds to create boats.
  3. In a bowl, combine shrimp, cherry tomatoes, and pesto sauce. Season with salt and pepper.
  4. Fill each zucchini boat with the shrimp mixture.
  5. Sprinkle mozzarella cheese on top of each boat.
  6. Bake in the preheated oven for 20-25 minutes or until the shrimp are cooked through and the cheese is melted and golden.
  7. Remove from the oven and garnish with fresh basil.
