Pesto Polenta Bites with Tomato Jam
- 1 cup polenta
- 3 cups water
- 1/2 cup pesto sauce
- 1 cup cherry tomatoes, halved
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1/4 cup sugar
- 1/4 cup balsamic vinegar
- In a saucepan, bring water to a boil. Slowly add the polenta while whisking continuously to avoid lumps.
- Reduce heat and cook the polenta, stirring frequently, until thickened (follow package instructions).
- Once thickened, stir in the pesto sauce and season with salt and pepper. Spread the mixture onto a baking sheet and refrigerate until firm.
