Pesto Polenta Bites with Tomato Jam



  • 1 cup polenta
  • 3 cups water
  • 1/2 cup pesto sauce
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/4 cup sugar
  • 1/4 cup balsamic vinegar



  1. In a saucepan, bring water to a boil. Slowly add the polenta while whisking continuously to avoid lumps.
  2. Reduce heat and cook the polenta, stirring frequently, until thickened (follow package instructions).
  3. Once thickened, stir in the pesto sauce and season with salt and pepper. Spread the mixture onto a baking sheet and refrigerate until firm.
  4. While the polenta sets, prepare the tomato jam. Heat olive oil in a pan, add cherry tomatoes, sugar, and balsamic vinegar. Cook on low heat, stirring occasionally, until the tomatoes break down and the mixture thickens into a jam-like consistency.
  5. Remove the chilled polenta from the refrigerator and cut into bite-sized squares. Lightly fry or bake them until golden and crisp.
  6. Serve the pesto polenta bites warm with a dollop of tomato jam on top. Enjoy!
