Pesto Parmesan Quinoa Bowl


  • 1 cup quinoa, rinsed and drained
  • 2 cups water
  • 1/2 cup basil pesto
  • 1/4 cup grated Parmesan cheese
  • 1 cup cherry tomatoes, halved
  • 1 cup baby spinach, chopped
  • Salt and pepper to taste


  1. Cook quinoa according to package instructions using 2 cups of water.
  2. In a large bowl, mix cooked quinoa with basil pesto and grated Parmesan cheese.
  3. Gently fold in cherry tomatoes and chopped baby spinach.
  4. Season with salt and pepper to taste.
