Ingredients

  • 1 cup couscous
  • 1 ½ cups cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup mint leaves, chopped
  • 1/3 cup feta cheese, crumbled
  • 1/4 cup Kalamata olives, sliced
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • Salt and pepper to taste

Instructions

  1. Prepare the couscous according to package instructions.
  2. In a large bowl, combine the cooked couscous, cherry tomatoes, cucumber, red onion, parsley, mint, feta cheese, and olives.
  3. In a small bowl, whisk together olive oil, lemon juice, cumin, coriander, salt, and pepper.
  4. Pour the dressing over the couscous mixture and toss until well combined.
  5. Chill the salad in the refrigerator for at least 30 minutes before serving.
