Moroccan Spice Roasted Carrots

Ingredients

  • 2 lbs carrots, peeled and sliced into sticks
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground cinnamon
  • 1/2 tsp ground turmeric
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the carrots with olive oil, cumin, coriander, cinnamon, turmeric, paprika, salt, and pepper until well coated.
  3. Spread the seasoned carrots in a single layer on a baking sheet.
  4. Roast in the preheated oven for 25-30 minutes or until the carrots are tender and slightly caramelized, stirring halfway through.
  5. Remove from the oven and garnish with fresh cilantro.
  6. Serve immediately and enjoy!
