Moroccan Spice Lentil Tagine

Ingredients

  • 2 cups dried green lentils
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 cup vegetable broth
  • 2 carrots, peeled and sliced
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Start by rinsing the lentils under cold water and set them aside.
  2. In a large pot, sauté the chopped onion and garlic until they are soft and golden.
  3. Add the lentils, diced tomatoes, vegetable broth, carrots, cumin, coriander, turmeric, cinnamon, salt, and pepper to the pot.
  4. Bring the mixture to a boil, then reduce the heat and let it simmer for 25-30 minutes or until the lentils are tender.
  5. Once cooked, adjust the seasoning if necessary and serve the tagine hot, garnished with fresh cilantro.
