Moroccan Harissa Lentil Salad



  • 1 cup dried green lentils, rinsed
  • 1 red bell pepper, diced
  • 1 cucumber, peeled and chopped
  • 1/2 red onion, finely chopped
  • 2 tablespoons harissa paste
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish



  1. Boil the lentils in a pot of water until tender but still firm. Drain and let them cool.
  2. In a large bowl, combine the cooked lentils, red bell pepper, cucumber, and red onion.
  3. In a small bowl, whisk together harissa paste, olive oil, lemon juice, ground cumin, salt, and pepper.
  4. Pour the harissa dressing over the lentil mixture and toss until well coated.
  5. Chill the salad in the refrigerator for at least 30 minutes to let the flavors meld.
